Detox Tabouleh
This delicious take on traditional tabouleh is raw, grain-free, and full of nutrients! Bursting with fresh flavors, these superfood ingredients also support detoxification in the body. If you haven’t yet tried cauliflower rice, this versatile vegetable is a staple of the grain-free diet! If you don’t have a food processor, you can also use a box grater to “grate” the cauliflower into rice. Many stores also sell “riced” cauliflower so you can skip a step, using a prepared option. Ingredients
  • 1medium head Cauliflowercored and chopped into florets
  • 1 daikon radishchopped (optional)
  • 3cups parselyfinely chopped
  • 2cups Tomatoesflesh and seeds removed, finely chopped
  • 1 English cucumberseeded and finely chopped
  • 1bunch scallionsthinly sliced
  • 2cloves garlicminced
  • 1/4cup Extra-virgin olive oil
  • 1/4cup Fresh lemon juiceabout 2 lemons
  • 2teaspoons Sea Salt
  • 1teaspoon fresh ground black pepper
Instructions
  1. In a food processor, add cauliflower florets and chopped daikon radish. Pulse until you have a rice-like texture. (You may need to do this in batches to avoid over-crowding your food processor.)
  2. Add the riced cauliflower and daikon radish to a large bowl. Add all other remaining ingredients and mix well.
  3. Add more lemon or seasoning to taste.
