French Grated Salad
  • 6 carrots
  • 4 radishesoptional
  • 1 Fennel bulb
  • 1tsp toasted fennel seeds or cumin seeds
  • 1tsp grainy mustard
  • 3tbsp organic lemon juice
  • 1/4cup olive oil
  • fresh parsley to topoptional
  1. To toast the seeds: simply place them in a skillet and heat to medium-high. Constantly stir them around the pan until they are lightly browned.
  2. Place the carrots, radishes if using, and fennel bulb into a food processor or grate by hand. Place into large bowl and combine.
  3. Combine the grainy mustard, lemon juice, olive oil and honey in a small container or bowl and mix thoroughly. Mix in seeds.
  4. Top with fresh parsley if desired.
