French Grated Salad
toasted fennel seeds or cumin seeds
organic lemon juice
fresh parsley to top
To toast the seeds: simply place them in a skillet and heat to medium-high. Constantly stir them around the pan until they are lightly browned.
Place the carrots, radishes if using, and fennel bulb into a food processor or grate by hand. Place into large bowl and combine.
Combine the grainy mustard, lemon juice, olive oil and honey in a small container or bowl and mix thoroughly. Mix in seeds.
Top with fresh parsley if desired.
