Mix all of the seasonings together in a small container and shake to blend. You may also blend in a bowl with a spoon. Set the spice mix aside.
Take ½ of the chicken broth and one of the canned tomatoes and blend in blender. If your picky eater does not like “chunks”, you can add the onions and the other can of tomatoes. If the blender becomes too full, set aside some of the liquid into a bowl. Adding the liquid helps to pulverize the harder vegetables.
Cut up the vegetables that you have chosen. Add them to the blender and blend until you have a thick liquid. If you don’t think your blender can blend the items, you can steam them first to soften.
Brown the ground meat in a pan and drain any fat. Transfer the meat to a large pot. Add the taco seasoning and stir to blend.
Add the vegetable blender mix, stir to incorporate and heat over medium heat for about 30 minutes or until thickened to your liking. Add more seasonings/salt if needed to taste.
**Choose one to all of the following. The quantity is not listed since it can vary depending on how many different options you choose to use. You can start with ½ cup of whichever veggies you choose, but the more you add, the better:
-Zucchini or yellow squash
-Canned or fresh pumpkin or sweet potato
-Spinach, kale or other greens
