A taste of France! Ratatouille is a traditional vegetable stew from Provence in the south of France. We’re simplifying the traditional recipe by cooking the vegetables in the slow cooker, rather than the traditional way, but we’re not sacrificing flavor! Full of fresh vegetables like eggplant, zucchini, tomatoes, bell peppers, onions, garlic and herbs, this is a wonderful vegetable side dish to any meal or you can serve over lentil pasta or even in an omelet for a complete meal!

Ingredients
- 1/4 cup olive oil
- 6 cloves garlic minced
- 3 onions sliced
- 8 plum tomatoes chopped
- 4 medium Zucchini chopped
- 1 large eggplant chopped
- 2 ed, yellow or orange bell peppers chopped
- 1/2 cup vegetable broth
- 1/4 cup tomato paste
- 1 tablespoon Thyme
- 1 tablespoon oregano
- Sea Salt
- Fresh ground pepper

Instructions
- Add all ingredients to your slow cooker. Mix well to combine.
- Cover and cook 4 hours on high or 7-8 hours on low. Add salt and pepper to taste.
- Serve warm.
